Baked Salmon with Mango Salsa

Baked Salmon with Mango Salsa

The sun is shining and it's heating up here in Ontario! Break out the margaritas, turn on the tunes and set up a little fiesta. (Did you know, we are totally into themed dinners?)
This Mexican inspired salmon dish is super easy and really delicious. You just need one special spice, Tajin. It's a chili pepper seasoning mixed with salt and lime. You can find it at most grocers and it's delicious on so many things!

Serves 4

Ingredients:

  • 1 1/2 lb salmon filet, skin on

  • 1 Tbsp olive oil

  • 1/2 tbsp Tajin

  • 1/4 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp sea salt

For the Salsa:

  • 1 diced mango

  • 1/4 cup diced red onion

  • handful cherry tomatoes, quartered

  • 1 14oz can black beans, rinsed

  • 1 jalapeno, diced

  • 1 lime, juiced

  • s&p to taste

For the Topping:

  • 1 diced avocado

  • 1/4 cup cilantro, chopped

Directions:

Preheat oven to 400°.

Place salmon on a baking dish and brush with olive oil. Sprinkle with Tajin, cumin, garlic and salt. Bake in oven for approx. 20 mins until flaky.

Make salsa:
Add all ingredients to a medium bowl, mix together and top with lime juice. Add s&p to taste and set aside.

Serve on a platter topped with the salsa, avocado and cilantro.
